Monthly Weigh In – Feb.2026/ Mediterranean Diet


When I got on the scale this morning I wasn’t feeling too positive. Surprise, 138.8. I lost 3.2 lbs. I feel this is significant for me since I have been trying. I started riding my stationary bike while doing reps with 2 lb weights for my arms. I’m not up to 20 minutes yet but I am at 15. Pete is away again so I took this opportunity to start the Mediterranean Diet Plan that ChatGPT made up for me.

Late last year I went on ChatGPT and asked the bet way for me to lose weight. I put in my age, current weight, the fact that I am mostly sedentary and finally how much I wanted to lose, 20 lbs. It came back with what it felt was the best plan for me, which was The Mediterranean Diet Plan. It included a week’s worth of menu’s with recipes; breakfast, lunch, snacks and dinners. It also included a shopping list. It was nice that I actually had most of the items which included quinoa, plain Greek yogurt, fruit, (berries, apple), avocado, oatmeal, honey, olive oil, hummus, whole wheat wraps, feta, cherry tomatoes, salmon, almonds and lettuce, (spinach, romaine). I have most of these in the pantry, the fresh fruit and vegetables I buy weekly. For these particular recipes I needed to add zucchini, peppers, and eggplant, also Chia seeds.

One dinner called for 6 oz of salmon with lemon, 1 cup of grilled vegetables with a 1/2 cup quinoa. This was easy. I grilled all the vegetables and made 2 cups of quinoa, enough to heat up for several dinners. I had to then just bake the salmon. When I started I made another recipe, 3/4 cup plain Greek Yogurt, 1/2 cup berries, 1 Tbs. of Chia seeds and 1 tsp. of honey. I had this for dinner one night not realizing this was a breakfast recipe. It filled me up so I was okay. Last night I had a wrap. I didn’t buy whole wheat, I bought Ole spinach wraps, lower in calories and just as healthy. I followed the recipe with 2 Tbs. hummus, spinach, some cut up cherry tomatoes and I added some of the grilled veggies. The snacks they list are an apple with 1 Tbs. peanut butter, (which I don’t use). Another snack is 1 ounce of almonds, (that’s a lot). I haven’t been eating the snacks since I eat lunch around 2. I did add the almonds to lunch once. Another day for lunch I had 3/4 cup of yogurt with 5 strawberries and a whole wheat Thomas’s 100 calorie English muffin with avocado. The recipe called for whole wheat toast, which I substituted with the English muffin. That is also one of the breakfast menu’s so you can see that I do mix it up a bit. Tonight I will have salad using one of their recipes and another piece of salmon. I do have 2 cups of coffee with a Tbs. of 1/2 and 1/2 in each .

I am happy with these menu’s and ingredients. I have not had any sugar at all. It will take a lot of willpower once Pete gets back and starts bringing home all these treats he gets. On another note, I have always been constipated. This is caused by multiple medications that I take. As an added bonus, since starting this regime I no longer am constipated! Whoo hoo!
