It seems like I haven’t made an entry in a long time, with so much going through my mind, driving me nuts, I’ll try to remember where I was with all of these feelings.
I left off with my son coming down for Easter, with his girlfriend and my beautiful granddaughter! What a wonderful visit! I loved waking up every morning with her smiling face. She is putting words together and is such a pleasant child! I made dinner for the Friday night they came. I made linguini with mussels and shrimp fra diablo. I thought I had sauce I previously made in the freezer. I knew one of the containers was the sauce for stew and the other was tomato sauce I had made from scratch. Upon opening the stew sauce, I discovered that not only was it the sauce, but meat, potatoes and carrots too! I scooped out the vegetables, mixed the sauces and added some tomato paste and water. I also made naan with the usual kalamata olives, sundried tomatoes, artichoke hearts and fresh mozzarella, with a regular salad. They raved over it, said it was like they went to a restaurant. One of these days I will bring my recipes in the office and share, but until I remember to do that, I’ll just have to talk about them. You’ll know because the title of the post will be “Recipes”
We went out to eat on Saturday night and Sunday was Easter. I cooked a ham with glaze and pineapples, the famous sweet potato pie, broccoli and an Easter bread, (my granddaughter loves broccoli). Easter bread dessert chocolate Bobka, P had picked up at a polish bakery that was delicious! My granddaughter had her first Easter egg hunt. I took a ton of pictures, she’s such a beautiful little girl! We’ll be going up to NY in May for her 2nd birthday.
It was so much fun getting to know her personality. She seems to be quite the diva. When she doesn’t agree with something, she very quietly says, “no, no, no, no, no” with a big smile. If you tell her no, depending on what it is, she will gently and carefully lie down on her back and let out one “aah”, it is not a scream, she does not throw herself down or continually scream, that’s it, she is done. On demand she will give you a mad face, happy face, sad face. She loves to be social, always friendly and likes the attention. I think I finally have my little actress! I named my daughter the perfect name to be an actress, and although she is the drama queen, there is not a hint of actress in her. I know we shouldn’t put our lost aspirations on our children or grandchildren, and I won’t and don’t, but I can dream it in my head.
