Day After Day – Diet Update, and a Recipe too

Today is Tuesday. My cousin C, #2, came Friday night with her husband and daughter, A. They also brought their dog, Franklin, and A’s dog, Rosy, (more on that later). We were originally going to get pizza, but our favorite place was away on vacation. I had small potatoes to use up and a ton of cherry tomatoes out of our garden. I made my potato salad, (recipe below). I also made my tomato salad. To that we added Buzz and Ned’s Barbecue, and bought brisket, pulled pork and pulled chicken. My husband picked up onion rolls and fresh corn bread. Needless to say, I went off my diet.

Let’s see, in the past four days I’ve had multiple rolls, pulled pork, pulled chicken, potato salad, hot dogs with buns, big Panera bagels, (2) with cream cheese, three pieces of corn bread, a cinnamon roll, and another pastry. They had brought cookies from a bakery, so I had 3 of them and a cream puff, yum! My biggest problem is that I LOVE FOOD!!!!

So let’s see, I’ve been on a diet of 1200 calories a day, using My Fitness Pal app to track it,all for three months, and have lost four pounds, (not very good in my eyes). I had to get on the scale this morning. I deserved and thought I gained it all back. I weighed in at 139.6. I started at 143.? Better than I thought. Anyway I enjoyed having them here and hope they stay again on their way back to NY.

I loved having puppies in my house again! Franklin is a 10 year Cavalier King Charles Spaniel, adorable!!!! Rosy is a new breed, a miniature Golden Doodle.. Does not look like any Goldendoodle I’ve ever seen. She is 18 months and about the same size as Franklin. Her color is so unique, reddish brown, more brown and curly. The cutest baby with tons of energy. They both loved the yard and Rosy kept running laps the whole time she was here! That’s exactly what our Maggie, loved to do.

Potato Salad

  • 2 lbs. small potatoes, (any variety, try different colors) cut in half
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 3 Tbls. Dijon mustard
  • 1/4 cup minced red onion
  • Parsley, celery salt, and pepper to taste

Boil potatoes for 15/20 minutes. While the potatoes are boiling. whisk together Dijon mustard, red wine vinegar, onion and spices. Slowly drizzle in the olive oil while whisking. Drain potatoes, run under cold water, and mix together with the dressing. Can be served warm or cold. We prefer it warm, so after refrigeration, you can heat up in microwave or enjoy it cold.
